Rustic Italian Tortellini Soup

Ingredients:

  • 2 cups of vegetable broth
  • 200g of fresh tortellini
  • 1 cup of diced tomatoes
  • 1/2 cup of chopped spinach
  • 1 clove of garlic, minced
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of dried oregano
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese for garnish

Kitchen Tools Needed:

  • pot
  • ladle
  • cutting board
  • knife

Instructions:

  • In a pot, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Pour in the vegetable broth and add diced tomatoes.
  • Bring the mixture to a boil.
  • Add the tortellini and cook for about 3-4 minutes until they float to the top.
  • Stir in the chopped spinach and dried oregano.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese.
