Potato Soup

Ingredients:

  • 200g of potatoes
  • 500ml of vegetable broth
  • 100ml of cream
  • 50g of onion
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:

  • saucepan
  • blender
  • measuring cups
  • ladle

Instructions:

  • Peel and dice the potatoes into small cubes.
  • In a saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  • Add the diced potatoes to the saucepan and stir for a couple of minutes.
  • Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes until the potatoes are tender.
  • Once the potatoes are soft, remove the saucepan from heat and use a blender to puree the soup until smooth.
  • Stir in the cream and season with salt and pepper to taste. Heat for an additional minute if needed.
  • Serve hot, garnished with a drizzle of olive oil or herbs if desired.
