Ingredients:
- 200g of potatoes
- 500ml of vegetable broth
- 100ml of cream
- 50g of onion
- 2 cloves of garlic
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste

Instructions:
- Peel and dice the potatoes into small cubes.
- In a saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced potatoes to the saucepan and stir for a couple of minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes until the potatoes are tender.
- Once the potatoes are soft, remove the saucepan from heat and use a blender to puree the soup until smooth.
- Stir in the cream and season with salt and pepper to taste. Heat for an additional minute if needed.
- Serve hot, garnished with a drizzle of olive oil or herbs if desired.
