Quick Laksa Soup

Ingredients:

  • 200ml of coconut milk
  • 150ml of chicken broth
  • 100g of rice noodles
  • 100g of cooked shrimp
  • 50g of bean sprouts
  • 1 tablespoon of laksa paste
  • 1 teaspoon of soy sauce
  • 1 tablespoon of lime juice
  • fresh cilantro for garnish

Kitchen Tools Needed:

Instructions:

  • In a saucepan, combine the coconut milk and chicken broth, then bring to a gentle simmer over medium heat.
  • Add the laksa paste and soy sauce to the saucepan, stirring until well combined.
  • Once the mixture is simmering, add the cooked shrimp and rice noodles, cooking for an additional 3-5 minutes until the noodles are heated through.
  • Stir in the lime juice and bean sprouts, cooking for another minute to warm the sprouts without wilting them.
  • Remove the soup from heat, ladle into a bowl, and garnish with fresh cilantro before serving.
