Ingredients:
- 250g of potatoes
- 100g of kale
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 600ml of vegetable broth
- 25ml of olive oil
- Salt to taste
- Pepper to taste

Instructions:
- Peel and dice the potatoes into small cubes.
- In a pot, heat the olive oil over medium heat and add the chopped onion and minced garlic, sauté until soft.
- Add the diced potatoes and pour in the vegetable broth, bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Using a potato masher or immersion blender, blend the soup until smooth and creamy.
- Stir in the chopped kale and let it cook for another 5 minutes until the kale is tender.
- Season with salt and pepper to taste, and serve hot.
