Caldo Verde Soup

Ingredients:

  • 250g of potatoes
  • 100g of kale
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 600ml of vegetable broth
  • 25ml of olive oil
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:

  • Pot
  • Knife
  • Cutting Board
  • Ladle

Instructions:

  • Peel and dice the potatoes into small cubes.
  • In a pot, heat the olive oil over medium heat and add the chopped onion and minced garlic, sauté until soft.
  • Add the diced potatoes and pour in the vegetable broth, bring to a boil.
  • Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  • Using a potato masher or immersion blender, blend the soup until smooth and creamy.
  • Stir in the chopped kale and let it cook for another 5 minutes until the kale is tender.
  • Season with salt and pepper to taste, and serve hot.
