Goan Fish Curry

Ingredients:

  • 200g of white fish (like cod or tilapia)
  • 1 tablespoon of coconut oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 1 tablespoon of curry powder
  • 200ml of coconut milk
  • 1 tablespoon of tamarind paste
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • fresh coriander for garnish

Kitchen Tools Needed:

Instructions:

  • Heat the coconut oil in a pan over medium heat.
  • Add the chopped onion and sauté until golden brown.
  • Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.
  • Add the curry powder and stir well, allowing the spices to bloom for 30 seconds.
  • Pour in the coconut milk and bring the mixture to a simmer.
  • Add the tamarind paste, salt, and sugar, stirring until combined.
  • Gently add the fish into the pan, making sure it's submerged.
  • Cover and cook for 5-7 minutes or until the fish is cooked through and flaky.
  • Remove from heat and garnish with fresh coriander before serving.
