Ingredients:
- 200g of white fish (like cod or tilapia)
- 1 tablespoon of coconut oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 tablespoon of curry powder
- 200ml of coconut milk
- 1 tablespoon of tamarind paste
- 1 teaspoon of salt
- 1 teaspoon of sugar
- fresh coriander for garnish

Instructions:
- Heat the coconut oil in a pan over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.
- Add the curry powder and stir well, allowing the spices to bloom for 30 seconds.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the tamarind paste, salt, and sugar, stirring until combined.
- Gently add the fish into the pan, making sure it's submerged.
- Cover and cook for 5-7 minutes or until the fish is cooked through and flaky.
- Remove from heat and garnish with fresh coriander before serving.
