Quick and Easy Seafood Stew

Ingredients:

  • 200g of mixed seafood (shrimp, squid, and mussels)
  • 1 can of diced tomatoes (400g)
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1 red bell pepper, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Kitchen Tools Needed:

Instructions:

  • Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, sauté until softened.
  • Add the diced red bell pepper and cook for another 3 minutes until it begins to soften.
  • Stir in the smoked paprika, then add the can of diced tomatoes along with the vegetable broth. Bring to a simmer.
  • Add the mixed seafood to the pot, season with salt and pepper, and cook for about 5-7 minutes until the seafood is cooked through.
  • Garnish with fresh parsley before serving.
