Ingredients:
- 1 cup of cooked rice

Instructions:
- Heat the vegetable oil in a frying pan over medium heat.
- Add the diced onion and sauté until translucent.
- Push the onion to one side of the pan and crack in the eggs.

- Add the cooked rice, peas, and carrots to the pan.
- Pour the soy sauce over the rice and stir until everything is well combined.
- Season with salt and pepper to taste.
